The old butcher style knife on top was a knife that my father used to skin just about anything that needed skinning...it was his back up knife with his hunting knife...notice the similar handle shape...and old Kephart style knife just ground a bit different....

The shape on your dads blade is intriguing! Other than a mouse I think it could skin about anything!
