One of the best to use for a neck knife (as far as with the original sheath) is the 601 with the double guard. I run a lanyard through the sheath drain hole, put a knot in the end that can be drawn into the sheath, then I knot the other end after passing through an overhand knot at the drain hole. The knife goes in the sheath either way. It's small. And, safe to use.

Thanks Ivars, I am surprised that you had a spoon carver with a double bevel. The ones I've seen are laminated blade. But, it should not be visible. If a laminated blade  is not sharpened with the stone laying flat, the stone can cut away the harder steel, leaving a secondary bevel, which would be at a different angle than the intended angle. More of a blunt edge in comparison to what the factory edge was. Some use a wooden dowel rod wrapped with sandpaper for sharpening.
