Well I am glad the cut is not bad...Sharpen them all, she will get used to using a sharp knife
Oh dear "er indoors " has just cut herself on the newly sharpened kitchen knives, not badly fortunately though it is my fault for sharpening them !!
Oh yes, you must be light handed and develop a rhythm with every blade you sharpen on the Apex. Once you realize the rhythm required for each knife is different, you look forward to doing different styles of blades.
Just been trying out the Edge Pro on kitchen knives. It will take a little while to gain fluency in the handling of the machine I think, but it has taken no time at all to get the kitchen knives sharper than they have ever been. It seems so easy to just hit that edge with each stone , a quick wipe on my strop after the 1000 grit and they are slicing newspaper with ease. Need to find some ripe tomato's ! I can do this free hand but it takes a lot longer and I don't have the same enthusiasm for kitchen knives that I have for pocket knives. Also I now know what angle I have them sharpened at and can reproduce that or change it at will.

Hi Manx, thanks for the info I will check it out. Have found the forum at CKTG and there stones and strops look very good , the postage is very high there though for shipping to the UK ,like $50 high ,with taxes on top it get's a bit pricey for me.
I have been watching clips on You Tube ,jdavis882 and Ben Dales stuff have been helpful so far. Hope to start on kitchen knives this evening !
