Outside of using one of those 'Sharpness Tester's (Like the ones I have seen on the youtube videos), how do you check/verify the sharpness of your knife?  The knife I am cleaning up and sharpening, cuts paper really nice and cleanly, and feels sharp against my thumb.

I have never put much faith in shaving arm hair...

I intentionally put a little more acute angle on my sharpening of this knife.  I see this knife being used in the kitchen more than anywhere else, so I ensured that it is a slicer, not a chopper. 

A fine edge; honed and stropped nicely.  I have not had the chance to slice veggies with it yet, but I expect it to excel in that task.
