Have you ever wondered how a new knife company or related business starts up today?  There are a bunch of kitchen knife companies that show up on Kickstarter but every once in while just an everyday EDC starter shows up. Do you have it in you to check out a new design by an unknown?  How about new knife stands?  A new type of card knife?

Not really a start up but one you should look at is Ferrum Forge. I love the work they do and the partnerships they are making. Very much a work in progress!
