I'm finally heading back to the woods and camp, to do some deer hunting. I may even try get a duck or two. The duck season has opened.

Exactly, blade sharpness will also change your grip on the knife. from a comfortable easy grip to a more harder and more tiring grip.

Robert,

"Plastic":  I really don't know what Wusthof uses, or used back in the '70s in their non-wood handles.  I called everything that looked like plastic (black synthetic material), plastic until the Micartas came along.  I have a Puukko with a handle that I think really is plastic.  Anyway, the Wusthofs feel fine for kitchen knives.  That is, not used every day and not used all day long.  When cutting meat or other soft material, such as veggies, blade sharpness probably has more to do with comfort than the handle.  A dullish blade will tell you lots about how comfortable the handle is.
