In Memoriam Comment by Robert Burris on May 14, 2012 at 8:25: The little fillet knife on the right is the only fillet knife I have found in carbon steel and is flexable. It really takes a sharp edge for cleaning fish. Grilled veggies and fillet fish is hard to beat, my mom really loves it.
