We have been frying for over an hour. We're frying potatoes, mushrooms, zuccini, hush puppies, Sac au Lait [Crappie] and shrimp. The girls are doing the cooking, I am so proud. They ask a cooking question every.......now and then.
Went out for burgers and fries, followed by a final drive to look at the last of the Christmas lights in the area.
With the long nights, I hate to see them go.
Robert, we always have pork chops, black eyed peas, greens and cracklin cornbread on New Years day.
Traditionally they are supposed to represent---
The pork is symbolic of progress and prosperity because the pig is the only animal that eats while it is moving forward.
Black eyed peas symbolize good luck. There are several stories around as to why. The one I have heard most is that when Savannah was burned to the ground, the people suffered great deprivation, and then, luckily, a huge barrel of black-eyed peas was discovered and the black-eyed peas kept the population from starving until more food could be had.
(Mom always said they represent our pennies.)
The collards are green (and our dollar is still green, and the rest of the money is still mostly green) - prosperity.
The cracklin cornbread? I don't know a reason other that it was my mothers recipe and a favorite of mine.
Greens are sooooo easy to cook Craig. Clean them, strip out the stems. Get the water ready. a small touch of brown sugar, a ham hock, some salt and pepper,onion and garlic powders in chicken broth. put the clean greens in and cook until tender Eat and enjoy
Happened to have a bag of the "Cajin" variety in the pantry. Made up a pot and threw in a couple of pieces of rib eye steaks along with a ham bone. If I would have found some chicken I'd have added that too, for some barnyard soup...

Robert, my favorite winter soup is the 15 bean soup, by "Hursts".
Never follow the recipe on the bag though. Just add what ever I want. (Always have some ham bones in the freezer,)
