    We have been so busy with everything. We sent out for Pizza Hut Pizza. We are almost finished with the plumbing and seuwer plant, for the girls cottage. We don't have alot of time to other things at the afternoon, project time. I will be so glad when this project is over.

    So Sunday is my day to cook and make the rest of the week easier.  Pulled pork cooking for Donnies lunch this week, eggs boiling for my breakfasts.  Blackeyed peas and rice for tonight and tomorrow night.  Home made cinnamon rolls and sausage for breakfast :)

    Tonight was homemade veggie lo mein

    Dinner tonight Thai shrimp rolls

    1 tablespoons soy sauce
    1 pound unpeeled large shrimp
    3 tablespoons freshly squeezed lime juice
    1 tablespoon sambal chili paste
    1 large cucumber cut into matchsticks
    1 large carrot, peeled and grated
    3/4 cup fresh cilantro, chopped


    wrap it in round rice paper wrappers and serve it with ginger sauce

    1/2 cup low-sodium soy sauce
    1/4 cup rice wine vinegar
    2 tablespoons finely grated ginger
    2 tablespoons chopped green onion
    2 medium cloves garlic, minced
    2 teaspoons sugar
    1 teaspoon sesame oil

    The oldest daughter and I had cheeseburgers, for lunch, at the Palmetto Knife Show. Got her back in time for the youth's spaghetti dinner at church.

    It was nice. Keep in mind that it's not the Blade Show.
    This is a small show, with somewhere about 2 dozen venders. It is however the ONLY "Knife" show in the state.
    Kaylin took a couple of pics, before the battery went dead. I'll post them tomorrow, when I get the desktop fired up.
    Folks asked me about my iKC hat and I gladly talked about us to anyone that expressed intrest. Was able to pass out some cards also.
    BTW, Kaylin really enjoyed the chance to see a "knives only" show. There were a few other "younger" folks that attended. One young boy was visibly excited by a bin of $2.00 knives. It was nice watching him go through it with his grandfather.
    If we want to bring the next generation along, in collecting, take them to a show.
