Years ago in Jackson, Wyoming I had some smoked trout.  (I don't remember the name of the restaurant.)  It was fantastic!

Smoked trout is just the best I think I prefer it to smoked salmon , though salmon is pretty good.

yes the best way I enjoy trout....is smoked and a little maple syrup....mmmmm

but I mostly baked in the oven with a variety of spices...[onion, lemon pepper, a little garlic]

Yes we went out at daybreak and fished till noon the next day we went out again to the same holes and caught another bunch...nothing like fresh fish...just love it!!
