I have had good luck with the Boker knives like the 7474 or 4474 series. These are the 4" closed stockman made in Germany. Boker also offers the 9885 series that is made in Argentina and the Bonsai series made in China and the Boker Plus Classic series made in China.
Recently my Father complained that his knives did not seem to hold an edge like they used to. I gave him a Boker BO7474 Carbon steel blades with Rosewood handles and he has not complained once about it. And when it comes to using a knife he is tough on one, he may be carving wood one minute and the next stripping wire and he keeps it sharp.

A pocketknife with 3 blades. Usually a Clip, Sheepsfoot, and Spey blade. Traditionally was carried by cowboys and ranchers. The Spey blade was used for castrating calves and other young male animals.

what is your definion of a stockman?

I have 3 Moore Makers, a stag stockman, a yellow bone stockman and a stag trapper. The quality of the stag is great. The knives walk and talk as they used to say, and quality seems on par with other knives in the price range.
Most are carbon steel and mine seem to hold an edge pretty well.

I really enjoy the deep tones of vintage stag. The scales on that knife make it look warm and inviting almost asking you to pick it up.

my favorite cattle pattern is this 32175 CATTARAUGUS with genuine stag handles, long pull match striker on master blade, and spey

blade stamped for cutting flesh only.

Ok I was looking trough my pics and found a few more. So if no one minds I will add another couple of photos of some of my stockman patterns.
Most of my stockmen run close to 4", however i do have a few above and below that.
The first one is a Puma that I bought over 20 years ago, it came in the green and yellow box.

The next one is a stag Bulldog, this is the 3 7/8" model.

This is the last one for this post.
It is a Henckel 4" stockman.
