wow ....never thought i would get so many reactions on my kitchen stuff

thanks for the compliments !

about the picture...  it can be a hell of a job sometimes to get the right reflection ( especially when you want to picture 2 knives together)  damast is not easy to work with !

composition is ( i hope) a little bit of skill....  i see my pics more as art than registration

as i said a bit earlier...   my knives are my models  and i play the painter

btw  i never photoshop or change colours  and use only daylight

and  leo,  nice set these komachis!! (i looked them up)

and again  thanks ...  i hope to show you some more pinups soon!

re: the wooden handled one.

It was originally identical to the btm one. I spent about a year evaluating other (current) manufacturer's steel before I decided on the laminated VG10. In that process, Abby identified a handle used on J.A Henkels 5-star line that she found comfortable. When I finally decided on the VG10 .. she got one handled to her preference.

That Catt Chef's knife .. the blade is only 0.060" thick .. @ the spine .. It's SWEET.

And frozen food is even no match for the cleaver !!

My kitchen cutlery was exclusively Cattaraugus .. till about 7 yrs ago .. @ which time I started converting over to the VG-10 core laminated w/ either 33 or 35 layers (depending upon the knife) of SUS430 & SUS431 high carbon steel on either side. The edge holding on this steel is simply amazing.
Of the knives in my kitchen .. these are ones I use. They're all VG-10 core laminated steel

..except..

the 2 remaining pcs of Cattaraugus.
Cattaraugus simply made some sweet kitchen cutlery !!!
