As with all of your EK knives, these are beautiful! Carl, I understand that Ek knives are made from a proprietary high-carbon surgical stainless steel called HCS 1415. I believe that it is comparable to 440C? Can you shed any light on the steel in these and all of your Ek knives? Usually when I see the word "surgical" associated with steel I think of Parker or Frost Japanese knives, which I usually shy away from. I'm hoping that you can tell us a little about the steel used in these legendary knives?
