My experience with this Damascus material is very limited. I have done a couple of chef knives from blade blanks that I purchased from Jantz Supply that were of this material. I was impressed by their finish and the way they sharpened & held an edge. This knife is from a pair of blanks from Premium Knife Supply indicating they were made  from "San Mai Damascus" material. Their material appearance is the same as those from Jantz. The only other Damascus that I have worked with is "Alabama Damascus" material which has no stainless material folded in. The other blank I will be finishing with handles from Stag Cut Amber Bone slabs. I will post a pix when I get it finished.

Just finished a Damascus Drop Point knife. Purchased blade, San Mai Damascus, made some profile adjustments & finished off with Black handles made from Buffalo Horn.
