This is my 2021 CFK Nessmuk-style skinning knife. I use this blade style a lot in my meat prep for the smoker and BBQ.

Note that it's 420J2 steel. I had to look that one up. I'm not sure if it's good or poor, but it sure holds a good edge and it cleans up well when used for the BBQ.
