Normally, a mushroom knife will also have a soft bristle brush used to remove dirt and debris from the mushroom without bruising. The preferred bristle material is wild boar bristle; however several also use horse hair and some do not have a brush at all.

As the Mushroom knife appeals to a very specific clientele, few knife makers manufacture them. As far as I can tell they are not made by any major American brand other than Rough Rider and their production takes place in China. Most of the knives are made by European companies. Typically these companies are more inclined to make work type knives instead of traditional pattern knives. It also seems that most mushroom knives are sold through garden tool distributors and not knife sellers (Similar to how marlin spike knives are more likely sold in boating accessory stores than knife stores).

So Far I have made one and have bought two. However, I see more mushroom knives in my future.
