That is a fantastic knife.  I love a kitchen knife that stays sharp.  Nothing worse that grabbing a knife and having it tear up dinner

This is Shosui Takeda, a third generation cutler from Japan.  He makes phenomenal kitchen knives.  I Use a Japanese waterstone to sharpen it.  It holds an edge for the longest of any kitchen knife, I have, Sheffield, Solingen, Maniago, I prefer this Japanese knife to any other knife I have in the kitchen.
