Hello, Heres one I finished up this week. Its some of our twist damascus with blackwood and Alligator Gar Pike skin handles.  Let me know what ya think of this NEW material.  This is the first GAR pike skin handle I have made. 

 

Hello everyone.  As some of you may already know, I have been working on a “secret” project and its time to share this with the world!!! 

HHH Custom Knives will be offering some limited runs of Stainless kitchen cutlery! 

I have been working closely with the one of the oldest knife manufactures of kitchen cutlery in the USA. Designing and refining a HHH Production 240mm gyuto. This is our 9.5" blade chef knife.

I chose AEB-L Stainless steel, because its a great Stainless steel for kitchen knives that is easy to maintain and takes a CRAZY sharp edge!

  The profile and blade grinds are based off my "custom" 240mm western handle chef knife. This part of the project has taken considerable time and efforts. But it was worth it. As that will result in all around better knives!  The manufacturer has been making kitchen knives for over 100 years. Not to mention there doing some amazing stuff currently. That combined with the attention to detail and refining the product to meet my standards. I know these knives will be a home run.

The blades will be  Heat treated to my specs. with a RC of 60/61 Which is almost as important as the grinds. 
They will  be ground full height with distal taper.  thin behind the edge where it matters and will be great all around cutters.
These knives will have my western handle profile. and each will be handled with hand picked 4AAAA figured rosewood handles. You know if I selected the handle material its gona be beautiful!!

The blade specs are as follows.
240mm on the edge. Thats 9.5"
height will be approx. 49mm at the heel. approx 2"
Blade thickness will be approx 2.5 mm above the heel tapering to the tip. 
Overall length is approx 14.5″
Rounded spine and choil for comfort
Contoured Rosewood handle With 3 stainless pins securing them.
Blade will be marked HHH and numbered. 1 of 100

This first batch will be numbered on the blades 1-100 and come with a certificate of authenticity.

Expected delivery Christmas 2013. But with production ya never really know. If this changes I will update this thread with new expected delivery dates. Yet L&G remain positive that delivery to me will be mid Dec. Making Christmas doable!

I will deliver these in the order in which I received the payments.

Knife pictures  are of the actual proto type that they are using to make this run of knives.  I currently dont have a finished knife to show ya yet! But will have soon! You can count on it looking very similar to this knife and all of my custom AEB-L stainless knives Made this year.. The finished knives will have Highly figured and even burly Honduran rosewood handles. and 3 SS pins.

My favorite knife changes from week to week and month to month. But mainly it must be easy to open and light in the pocket. This week its a custom folder.
Last week it was a Buck lock back. Next week who knows. May be a Camillus stockman. Hears a pic of this weeks FAV!
