I made a batch of deer jerky today.  And it is really good.  I make it from ground meat using a jerky shooter.  It comes out in a flat strip about the size of a strip of bacon.  Then into the dehydrator for about eight hours.  I have seven trays for the hehydrator and can do three pounds of meat at a time.

I remember the first batch I ever made. Sliced thin, but not too thin. I used the kitchen oven with a very low setting. The door was left cracked open while it cured, all night! My ex-wife hated the smell. Key word> EX_WIFE! I enjoyed every bit of what I didn't give to friends. When it comes to home made jerky you really know if someone is your friend when they give you jerky. If you don't get any, you'd better start mending some fences!!

When I make a batch of jerky it doesn't last long.  While i was still employed everyone at the office liked it.  The people at church like it and of course everybody at home likes it.

And you are right.  Too much effort and money go into making it and it tastes too good to give it to someone you don't like!

Yes it does take time and can get somewhat expensive. I would never give it to someone I didn't like. But people are just like spaghetti. There are good ones, better ones, and the best ones.
