Here is an example of what we were talking about.  I bought this knife in a lot.  When I looked at it I was instantly mad as heck.  The guys at camp love the Remington R3 big game knife. It is our "go to" carry knife when deer hunting.  I have one that is not abused to compare it with in the photo

I'm with you all the way on this, Kevin.  It was my father in law, the old style German cabinet maker, who taught me how to sharpen chisels.  Knives were a side issue, but the most important to me.  Still, it took me years of practice to get it right.

That was years and years ago.  I would like to think that I learned my lesson and haven't let anyone sharpen any of my knives since.

I was stupid enough to let one of those guys at a knife show show me how great he sharpens blades.  Luckily I had a 'beater knife' on me at the time and let him 'sharpen' that.  He set to his task and got an okay edge on it.  He then proudly showed me metal dust from the edge of my blade and showed how well his edge was.  He asked me what that dust was (meant).  I replied that it showed he was removing way too much material from the edge.  Took my knife and walked off.

Bloody idiot.
