Fried Squirrel..........Cut squirrel into pieces then steam or boil them till tender. Batter them in egg wash and flour. Fry them in grease the way you would do chicken. Fry only a couple of minutes, until the crust is cooked, because the squirrel is already cooked. Then place cooked Squirrel on paper towel, season to your taste. Note wild rabbit can be cooked the same way.

Yes Mam, fried rabbit is hard to beat. Sometimes, when we're eating, something like this, we wonder what the rich people are eating,....lol
Sauerkraut Balls
1 Can corned beef
½ lb. ham
½ lb. salami
2 med. Onions
Grind all above ingredients together.
2 – 2 lb. cans saurkraut (drained)
Regrind all above ingredients with saurkraut
1 Tbsp. salt
1 Tbsp. dry mustard
1 Tbsp. parsley
1 small can tomato paste
Mix all ingredients together.
Roll into balls.
Roll in flour, then egg, and then bread crumbs.
Deep fry and enjoy.
THE ULTIMATE CHEESEBALL --Folks, trust me, 40 relatives fight over this every Thanksgiving-- serve it on your favorite cracker- My personal preference is a Ritz-
Jennifer's Cheese Ball
4 (8 oz) Pkgs cream cheese
4(2 oz )Hormel Real Bacon Pieces
2 bunches-Green onions (use about 1/2 half thru green part-Good sized green onions
! 1/2 cup Fancy cheddarcheese- 12 oz.
2 Tsp. Garlic Salt
2 shakes of minced garlic--
Mix by hand in bowl. form into a ball, chill and serve--
This recipe can easily be cut down by half or more, This amount feeds a hungry army-- For myself, I cut the ingredients in half !! If you can only eat one bite-- I worry about ya !! LOL
Okay, a little clarification may be called for- Fancy cheddar cheese is nothing exotic- Think Sargento's shredded cheddar or another similar grocery store brand-- Just a decent shredded cheddar cheese-- My apologies-- Recipe was posted as originally given to me ---
BTW.Ddue to some family tragedies, turnout was half of the expected turnout this year-- First year I went home with a 1/3 of the cheese ball-- Finished it in 2 days by myself-- It is that darn good !!

Looks like we've got the beginnings of an iKC Christmas party.
Here's one that is always made, in the Smith household, every year at this time...
FANTASTIC FUDGE
(Linda’s famous recipe)
5 cups of sugar
½ pound of butter
1 (12oz) can of Carnation Evaporated Milk
1 (10 1/2oz) package of miniature marshmallows
18oz package of semi-sweet chocolate chips
Dash of salt
2 cups of chopped nuts (walnuts or pecans)
In a large bowl, combine marshmallows, chocolate chips and nuts. Beat and blend mixture by hand until well mixed. Set aside.
Mix sugar, butter and milk. Stir constantly over medium heat, bring to a boil. Cook for 8 minutes.
Stir constantly during the 8 minutes. Add salt.
Remove hot mixture from heat.
Add marshmallow/chocolate chip/nut mixture to the hot mixture and mix until the chocolate chips have melted.
Pour into a buttered pan. Let set up firm. Cut into pieces and store in an airtight container.
Makes 5 pounds.

LINDAS CHRISTMAS FRUIT SALAD
14 JUICY ORANGES
1 CAN OF PINEAPPLE TIDBITS WITH JUICE
1 RED SKINNED APPLE
1 GREEN SKINNED APPLE
1 BAG OF FLAKED COCONUT
2 CUPS OF HAND CHOPPED PECANS
2 CUPS OF SEEDLESS GRAPES, SLICED IN HALF
2 JARS OF MARASCHINO CHERRIES, SLICED IN HALF WITH JUICE/SYRUP
3-4 BANANAS
3 1/2 to 4 CUPS OF SUGAR
ORANGE JUICE WITH PULP
PEEL THE ORANGES THICK ENOUGH TO TAKE OFF THE OUTSIDE SKIN OF THE SECTIONS AND SECTION THE ORANGES OUT INTO A LARGE BOWL. BE CAREFUL TO KEEP ALL SEEDS OUT . TWIST THE LEFTOVER PART OF THE ORANGE AFTER YOU HAVE SECTIONED IT TO GET ALL THE JUICE OUT. THEN ADD PINEAPPLE TIDBITS WITH JUICE TO THE ORANGES. DO NOT PEEL THE APPLES AS THE COLOR IS VERY PRETTY IN THIS MIX OF FRUIT. WASH, CORE AND CHOP THE APPLES AND ADD TO THE ORANGE MIXTURE. ADD GRAPES AND CHERRIES WITH JUICE. ADD SUGAR AND COCONUT, STIR AND TOSS TILL SUGAR IS DISSOLVED. ADD THE EXTRA ORANGE JUICE SO THAT THE SALAD IS NOT TOO THICK. IF YOU TASTE THE JUICE FROM THE FRUIT MIX AND IT IS TART, YOU MAY NEED TO ADD SOME MORE SUGAR. REFRIGERATE TILL WELL CHILLED AND WHEN READY TO SERVE ADD SLICED BANANAS AND STIR TO MIX. THEN ENJOY!!
IF YOU ARE LUCKY ENOUGH TO HAVE ANY LEFTOVERS, FREEZE IT IN SMALL CONTAINERS AND IN THE SUMMERTIME PULL ONE OUT AND PARTIALLY THAW SO THAT IT IS STILL ICY AND ENJOY.
MAKES A LARGE BOWL FULL FOR A LARGE FAMILY GATHERING AT CHRISTMAS.
