Okay folks, I've done some research (lots) and I am down to two choices for my sharpening system. Edge Pro Apex 4 or the Wicked Edge. What I am hoping for from the community are some opinions, experiences, fears, raves, warnings and/or praises for either of these systems you have used or owned, or use and own. Price is not really a factor at this point, as they are close enough to each other that either one is a possibility.

Keep in mind, I want this for my knives, friends' knives and possibly, once I get the hang of it, a bit of money work on chef's knives from assorted kitchens and chefs I know around the area. Making my money back for a system would be a definite plus! So, C'mon! If you have used either or both of these systems, I need your input. This is my Christmas Present, and I'm hoping to have the most informed opinion I can before placing the order.

PS...If it matters, I have never tried anything more ambitious than a bit of a touch-up on a small cheap stone, so my practical experience in sharpening is almost nil.

Glad to know you like your Edge Pro as much as I enjoy mine.  I have had mine for several years and for my money it's the best sharpening system out there.  Congratulations my Friend.

Excellent setup. You have the full range of stone grits to put any kind of edge on a knife. Coarse bevel and edge for a toothy edge all the way to a very shiny bevel and smooth edge. I never got good at using the polishing strips but those who have say they produce great results. If you don't mind a prediction I have one for you. I believe after watching videos (Ben on edgeproinc.com or youtube) and about 30 minutes of becoming somewhat familiar with the EP you will be getting knives very sharp. But after a month or six or twelve you will see an improvement in your edges both in how sharp they are and they type of edge you want. By type I mean different angles, toothy or smooth, etc. It is a very nice tool and does the hardest part of sharpening for you. That part is maintaining a consistent angle. When you get more familiar with any tool you get better results or performance from it. The EP is no different. Great choice and have fun.

Another good place to get tips is on the "chefsknivestogo.com" and "bladeforums.com" forums. You may know this already.

I based my decision on what was said in this discussion. I know based on that, it was a good choice.

Well it came in today. I will watch the DVD and read the book and then see how much damage I can do. Wish me luck.
