Excuse the ignorant redneck, but don't you make roux with butter and flour, or am I thinking of something else?

Seriuosly though,  we're having Smoked ham,  tater salad, marinated veggies and rolls.  Linda doesn't want to have to cook anything on Christmas day.  It'll all be ready and in the fridge waiting for dinner time.

Christmas Eve, we're gonna have seafood gumbo. Shrimp, crab and oyster. Baked sweet potatoes for a side dish and Pecan pie for desert.

Turkey, ham, mashed potatoes, corn, baked beans, dressing and gravy along with other things. We get to host the family dinner this year. We will have about 30 people here.
